The care of the chopping boards


This article will try to explain the main aspects of the care and maintenance of chopping boards. No matter what type of wood is used, the care of wooden chopping boards is the same.

There are two ways to prepare a workpiece before woodworking:


  1. The workpiece is steam-treated within 4-5 days.  It is dried in a natural way for 3 months or even more.  This allows you to change the structure of the wood. All the fibers are more stable to temperature fluctuations and are less exposed to deformations and wood splitting.  In this way, beech chopping boards are prepared.


  1. For oak boards, the following method is used. Boards come in two types: longitudinal glued, and end glued ones. To do this, specially sized bars are prepared, packaged and sent to modern drying machines, where they can be dried to 3-5% of humidity all around the board. It is only at this humidity level of wood that it allows effective gluing of the wooden bars. With more humidity, the wood just can’t be glued well.


The wood fibers should be oil-treated to ensure that the ready-made board, regardless of the type of wood preparation (steam treatment, professional drying), is ready for use.

A most important aspect of oil coating is the preservation of wood fibers from moisture exposure. The dehumidified wood is very absorbent. That is why it is very important for the wood to get absorbed oil, forming a protective layer against moisture being absorbed. Since the board in its use will be abundantly exposed to various temperature fluctuations, washing and drying out. Oily impregnation of the board will be the only protection of it from an aggressive environment. It is important to keep the impregnation going. Over time, the oil is not only washed away but also dries out, making the board more vulnerable to aggressive environments.


How often do you have to process a board with oil?


There are two types of board care to consider:


  1. The sale or pre-sale period. It concerns the pre-sale of chopping boards. After receiving the board to the warehouse, we recommend checking the state of the board's impregnation. This can be checked by visual inspection for the presence of impregnation. If impregnation is dried, the board gets a light structure of fibers. If the board is impregnated abundantly, it acquires a darker shade of fibers, highlights the structure of fibers and improves the product's appearance. It is recommended to keep in a dry place, at the recommended temperature (10-20 degrees C), with no direct sunlight exposure.

It is recommended to process it with oil during storage (10-20 degrees C) once a week.

Whenever a board is exposed to a more extreme and aggressive environment when selling it, you should visually check its impregnation condition by its color. You can apply oil more often if necessary.

If a board is packed with plastic, it must be removed when stored. Since the board can be molded, it is difficult to remove it afterward. When the condition is not very good, you can remove it by sanding it with fine sandpaper.

If for any reason you have not used the oil in time and the board has been deformed, you can restore it. It is enough to flip the board, and if it is very deformed, you can put something weighty on the top of the board (say, weights or water-filled jar). It will help you to restore the flat surface of the board faster.

These tips will help you with keeping your product in top form and in perfect condition.

  1. Tips for taking care of the boards in use. Especially important to maintain impregnation, because the environment can be extremely aggressive for the board's lifespan. Say in a cafe, or a restaurant board is subjected to great trials. They are used for cutting or serving food, and then the required washing and drying processes. If impregnation is not sufficient, the board may be deformed or simply cracked after washing. After washing, it is important not to put the board in a very dry and warm place, for rapid drying. Doing so will quickly destroy the board. Sadly this is a common mistake of the kitchen staff, where there is not much time for oil impregnation; the drying process should be a quick, optimized solution to put the board at the hot stove or dryer, resulting in the fast expiration of the board's lifespan. It is essential for the wood to dry out in a natural room environment. Thoroughly remove any moisture after washing with a dry cloth.

Ideally, a board should be oiled before each working day. Through the greasy surface of the board, the products will not stick to it, and will not be absorbed by the wood fibers, thus helping to keep its appearance and protect the wood from moisture-related damage. What is the best way to impregnate chopping boards and other kitchen utensils made of wood without varnish, dishes, forks, spoons, knives?

The easiest, cheapest, and most effective way to do this is to use ordinary vegetable oil, available in every kitchen. Flax oil is more effective, or even specially developed professional wood impregnation oil. They are odorless and have several improved properties. However, in general, the essence remains the same; all these products perfectly preserve the fibers of the wood. Re-processing is important. There is no overdose during oil treatment. You can treat the board boldly and abundantly with oil. All boards are initially doused in oil. A board takes up the required amount of oil, and the rest of the oil flows down by itself and just in a short time, there is a very limited quantity of oil on the board surface. The oil that stays in contact with the surface is barely left on your hands.

Knotted products are not defective, except in cases of penetrating damage of the product and there is a leakage in it. Before the sale, all products are examined for defects and found to be defective are excluded from the market.
